We are finally pushing our way into the chilly fall season in northern Illinois. The season change brings a bit more than just some jack-o-lanterns and scarf selfies on Instagram. Fall kicks off another time of the year for delicious seasonal food! If you need a reminder of what’s in season check this out!
To honor this WONDERFUL weather, here are five meals that I’ve already made to start the season off right.
1. Avocado, Bacon and Egg Toast with Quick Tomato Jam
I don’t usually focus on breakfast foods all that often but a few weeks ago I had the BEST breakfast. The Congo Room in Chicago jumpstarted my cravings all over again for all things eggs related. Check out this AH-mazing recipe from How Sweet Eats that will leave you [and me] consistently asking to have breakfast for lunch and dinner too.
2. One-Pot Creamy Tomato Tortellini Soup
Thank you Gal on a Mission for making another soup with pasta that I just can’t get enough of. This recipe makes A LOT of soup for just two people. Don’t worry though, we separated it into multiple tupperwares and our freezer is now stocked with a healthier alternative to frozen pizzas.
3. Vodka Sauce Chicken Zucchini Noodles
Zucchinis are already on their way out for the season so please don’t hesitate to make this delicious dish from Diethood. Zucchinis, chicken, a tomato vodka sauce – what more can you ask for? Kick your feet up, eat your zoodles and enjoy some of that vodka on the side while you’re at it.
[Editor’s Note: I don’t have a vegetable peeler large enough to cut my zucchini like this so instead I used my spiralizer. It’s still good!]
